Coconut pancackes

A tea time snack


Rice Flour – 2 cups

Grated Coconut – 1 cup

Sugar – 2 tbsp

Cumin/Jeerakam – 1/4 tsp

Water – As needed

Salt – to taste

Preparation Method

Mix all the ingredients along with water to make a smooth batter with consistency similar to that of appam. Keep the batter aside for at least 10 minutes.

Heat a non stick tava or griddle. Pour the batter on to the tava to form a medium sized pancake.

Cover and cook on medium heat till one side is cooked. This will take around 3-4 minutes. Uncover, turn sides and cook for 2 more minutes.

Best if served with chutney.
